Verdes Mexican Parrilla in Round Rock serves Interior Mexican food and offers an extensive array of Tequilas for you to enjoy. 

I am becoming more and more impressed with the quality of restaurants that are moving into the Round Rock area. And Verdes Mexican Parrilla is staying true to that trend by being a hip Tequileria and Grill that offers traditional Mexican food with a twist. 

The restaurant opened up in Round Rock off of Hesters Crossing in June of 2015, and features a very extensive Tequila offering with over 100 types to choose from. Upon walking in your eyes are immediately fixed on the cool decor, it feels very hip with graphic Mexican art that grabs your attention, and TV’s that play very high quality and educational videos on how Tequila is made. (They reached out to a handful of the worlds top Tequila makers and asked for copies of their promotional videos.) It is such a small thing but it literally is the coolest thing to watch while you’re eating enchiladas, and sipping on some Tequila. 

Calabaza Cakes

For dinner we ordered this appetizer that they call Calabaza Cakes, it’s –get this– spun spaghetti squash into little cakes and then deep fried, topped with stewed chicken, parmesan cheese and poblano cream sauce. I guess you can’t really consider that traditional Mexican, but it is innovative and tasted really good so it’s A-OK in my book!

For mains we went with the Pollo Palomino, it’s a chicken topped with  roasted poblanos, Monterey Jack cheese, avocado and poblano cream sauce. And the Poblano Chicken Enchiladas, which were both topped with the poblano cream sauce. It was spicy but creamy and had great flavor throughout.

Everyone there was super friendly, from the hostess to the waitress we had, they were knowledgable and shared fun tidbits with us throughout the night. The whole restaurant operates like a family and it really comes through in the experience. We learned about how Tequila is made, and enjoyed a delicious meal in the process.
