Why: If you’re like me and your sweet tooth is looking for something new to get addicted to then let me introduce you to Holla Mode. They operate out of a food trailer near Barton Springs making it a perfect pre or/and post swim treat, and hey if you have it twice in one day I won’t judge.

I had seen videos from Thailand popping up on the internet lately that showed off a frozen/ice cold block that creamy liquid was poured onto, pounded and ultimately shaved into thin rolls of ice cream. It looked badass and looked like it would be right up my alley. So when I heard that Austin had it’s own Tthai style stand, I had to venture out and give it a try. 

At Holla Mode they bring the experience of the popular frozen treat to the streets of Austin. You can choose from seasonal and rotating flavors, or to take the plunge and build your own concoction. 

My sister and I ordered one of each, I went with the Thai Coffee- it was made with coffee bean and cardamom, topped with sweeten condensed milk. I figured I would go with traditional Thai flavors for my first one. My sister chose to make her own, she started with a milk base, mixed with a vanilla bean flavors, then added in fresh chopped strawberries and almonds, topped with whipped cream. 

It was so fun to watch, they even have stools that level you up so you can get up close and personal with your Thai ice cream experience. It is both an art and a science, being quick to mix and then smooth the ice cream out so it can solidify, but not too much to where you can’t move it. They scrape strands of the ice cream mixture into rolls and nestle them in a cup so the rolls stand out.

It’s the perfect treat for the young and young at heart, and now I’m obsessed with watching them scrape the ice cream into rolls, it is addicting. And also good to enjoy too, the ice cream was creamy the flavors blended perfectly and every bite was good till the last drop.
