Chocolate Chia Almond Paleo Pudding

Tuning in to share a SUPER SIMPLE PALEO dessert with you all this morning.

It’s something I was recently on KXAN’s morning show, Studio 512, whipping up and you can check out the segment here! And I’ve also linked it below 🙂

The recipe is simple and foolproof, seriously if I can make it, you can make it. It’s easy to make because you throw all the ingredients into the blender and then pour into whatever bowl or mason jars you want to store it in. And then you can assemble it as you see fit, nuts, nut butters, fruit, seeds, honey, the list is endless!

The basic recipe is as follows– I pour these all directly into my blender vs using another bowl. 

1 and 1/2 cup unsweetened almond milk

1/2 cup cacao powder

1/3 cup chia seeds

2 teaspoons vanilla extract

1 tablespoon cinnamon

1/2 tablespoon salt

4-6 pitted dates depending on the size

For Assembly:

Almond Butter

1 banana sliced

1 cup of blueberries

1 cup of chopped strawberries

1 cup of chopped almonds

And then you take all of those babies, and you blend them for roughly 1-2 minutes. Pour into bowl or jars, and cover with a lid or cellophane. And let sit refrigerated for 6 hours, or overnight. Then when the chia seeds have absorbed the liquid, feel free to assemble with whatever your favorite ingredients are.

I make mine with almond butter, bananas, and then whatever fresh berries are in season like blueberries and strawberries. Top with crushed almonds and voila. A super easy, one bowl delicious paleo dessert!
